Delicious Breakfast Crumble

INGREDIENTS

Stewed Fruit
1 kg apples, cut into small chunks (I love to use pink lady or golden delicious)
Generous splash of water
1 tsp. vanilla extract
2 tsp. – 1 tbsp. ground cinnamon

Crumble
1 cup rolled oats
½ cup desiccated or shredded coconut
½ cup almond meal
½ cup walnuts, roughly chopped
½ cup almonds, flaked almonds
1 tsp. ground cinnamon
1 tsp. vanilla extract
2 tablespoons organic maple syrup
3 – 4 tablespoons coconut oil or butter, melted
Serves 8-10 portions

METHOD

Stewed Fruit
Wash the apples and cut into wedges or small chunks, leaving the skin on and removing the core.
Place the apples in a saucepan and combine with water, vanilla and cinnamon.
Cook over a medium heat for about 10 – 15 minutes, stirring occasionally until the apples have completely softened. Taste and adjust seasoning to your liking if necessary.
Serve warm or allow to cool to room temperature then store in airtight container in fridge for 4-5 days.

Crumble
Heat oven to 180C.
Combine all the dry ingredients in a large bowl.
Combine the wet ingredients in a medium bowl.
Add the wet ingredients to the dry ingredients and combine to coarse crumble forms.
Scatter the mixture over a lined baking sheet and bake for 10-15 minutes until the crumble is golden brown.
Allow to cool to room temperature then store in an airtight container until ready to serve.

To Serve:
2-3 tbsp. stewed apple (cool or heated), topped with 2-3 tbsp. crumble and a dollop of natural yoghurt

Not Only Nutritious, But Also Delicious Because:
Apples are high in fibre which helps regulate blood sugar levels and helps keep you feeling full for hours.
Apples are also a rich source of polyphenols which are known to have significant antioxidant properties. Thereby helping combat the cell damage that is linked to the development of many chronic diseases.

Create your own stewed fruit mixture, another favourite in our house is apple and blueberry or apple and raspberry.
